Qué es Nigella Sativa?

Nigella Sativa es una planta que florece, originaria de Asia que crece hasta 20-30cm con hojas lineales. La flor es delicada, y por lo general es coloreada de azul claro y blanco, con 5-10 pétalos. El fruto es una grande y inflada cápsula que se compone por 3-7 folículos unidos, y cada uno contiene numerosas semillas. La semilla se utiliza como especia. Hay un gran numero de nombres para llamar este planta.

Nigella Sativa también está llamada ajenuz, neguilla, Kalonji (Hindi), Kezah (Hebreo), Habbat-el-barakah (Árabe – literalmente : semilla sagrada) o Siyah Danah (Persa). Las semillas se remiten a comino negro, pero eso se utiliza también para une otra especie, Bunium Persicum. A veces, solo está llamada Nigella o grano negro.

Nigella Sativa pertenece a la familia de las ranunculáceas. Las semillas de Nigella tienen poco olor, pero cuando están molidas o masticada, developen un perfume que se acerca a orégano. El gusto es aromático y ligeramente amargo.

Aunque no se mencione Nigella en las traducciones communes de la Biblia, hay buenas pruebas que el nombre de una planta oscura mencionada en el Antiguo Testamento significa Nigella. Si se verifica, esto indicaría que Nigella está cultivada desde más de dos milenios. Hoy, la planta se cultiva de Egipto a India.

Composición
Las semillas contienen numerosos ésteres de ácidos grasos insaturados de structuras especiales con alcohól de terpeno (7%). Además, se encuentren rastros de alcaloides de dos diferentes tipos : alcaloides isoquinoléinos están representados por nigelimina y nigelimina-N-oxido, y alcaloides pirázoles que incluyen nigelidina y nigelicina.

En el aceite esencial (med. 0.5%, max. 1.5%), timoquina fue identificada como el componente principal (hasta 50%) además de p-cimeno (40%), a-pineno (hasta 15%), ditimoquinona y timohidroquinona. También se encuentren ratros de otros derivados de terpeno : carvacrol, carvona, limoneno, 4-terpineolo, citronelol. Además, el aceite essencial contiene significante cantidad de acidos grasos etilésteres. Timoquinona produce ditimoquinona y productos con oligocondensación más alta (nigelona).

Las semillas contienen también un aceite graso rico en aceidos grasos insaturados, por la mayor parte acido linoléico (50-60%), acido eicodadienóico (3%) y acido dihomo-linoleico (10%) que son característicos del género. Acidos grasos saturados (acido palmitico, stearico) equivalen aproximadamente al 30% o menos. El aceite de Nigella commercial también puede contener partes del aceite esencial, por la mayor parte timoquinona, de la cual adquiere un sabor aromático.
